NIHONSHU OF THE MOMENT
Japanese saké, or nihonshu, as it is called back home, is made from five elements: rice, water, kōji, yeast, and the will of the tōji (master brewer) and the kurabito (brewery workers).
Included in this list are a selection of shinshu namazaké – unpasteurized saké from this most recent brew year.
